Ingredients
- 1/2 cup dry quinoa
- 3/4 cup water
- 3 1/2 slices additive-free bacon
- 4 cups green leaf lettuce
- 1 pint cherry tomatoes
- 4 tbsp sour cream
- 3 tbsp quality mayo
- 1 clove garlic
- 1/4 cup finely chopped fresh chives
- 1/4 tsp sea salt
- 1/8 tsp black pepper
- 1 1/2 tbsp milk
Steps
- Rinse the quinoa, then simmer it with the water in a small saucepan for 15 minutes.
- Cook the bacon in a skillet over medium heat for 8 to 10 minutes, then drain and crumble it.
- Whisk the sour cream, mayonnaise, garlic, chives, salt, pepper, and milk in a bowl.
- Cool the quinoa for 5 minutes, then fluff it with a fork.
- Toss the quinoa, bacon, lettuce, and tomatoes with the dressing.
