Ingredients
- 1 pkg refrigerated shredded hash browns
- 1/4 cup butter
- salt and pepper (optional)
- 12 large eggs
- 1 1/2 cups half and half
- 1 cup shredded medium or sharp cheddar cheese
- 1 cup shredded swiss cheese
- 8 oz diced ham
- 1/3 cup chopped green onions
- 2 1/2 tbsp chopped fresh parsley
Steps
- Heat the oven to 375 F and butter a 9-by-13-inch baking dish.
- Spread the hash browns in the dish, season with salt and pepper, and bake for 15 minutes.
- Whisk the eggs and half-and-half in a large bowl until blended.
- Stir the cheeses, ham, green onions, and parsley into the egg mixture.
- Pour the mixture over the hash browns and bake for 40 to 45 minutes, until the eggs are firm.
