Ingredients
- nonstick cooking spray
- 2 1/2 lb yukon gold potatoes
- 3/4 tsp kosher salt
- 1/2 tsp fresh ground black pepper
- 3 tbsp finely chopped chives
- 10 oz brie cheese
- 1 cup reduced-sodium fat-free chicken broth
Steps
- Heat the oven to 375 F and coat a 9-by-13-inch baking dish with cooking spray.
- Slice the potatoes thinly and arrange half in the dish, then season with half the salt, pepper, chives, and Brie.
- Layer in the remaining potatoes, salt, pepper, chives, and Brie, then pour the broth evenly over everything.
- Cover the dish and bake for 45 minutes.
- Uncover the dish and bake for 20 minutes, until the potatoes are tender and the top is lightly browned.
- Rest the gratin for 10 minutes before serving.
