Ingredients
- 1 head broccoli
- 1 head cauliflower
- 1 head garlic
- 2 1/2 tbsp extra virgin olive oil
- salt & pepper
- 1 tbsp butter
- 1/2 cup almond milk
- 1 tbsp whole wheat flour
- 1/2 cup parmesan cheese
- 2 tbsp almond meal
Steps
- Heat the oven to 425 F.
- Toss the broccoli, cauliflower, garlic, olive oil, salt, and pepper on a large baking sheet.
- Roast the vegetables for 25 minutes.
- Melt the butter in a saucepan over medium heat, whisk in the whole wheat flour, then gradually whisk in the almond milk for 5 minutes.
- Squeeze the roasted garlic into the sauce and stir in half the Parmesan.
- Transfer the vegetables to a 9-inch baking dish, cover with the sauce, remaining Parmesan, and almond meal, then bake at 375 F for 20 minutes.
