Ingredients
- 1 lb broccoli florets
- 4 oz soba noodles
- 2 tbsp butter
- 1 tbsp olive oil
- 8 oz shiitake mushrooms
- 1/4 cup ponzu
- kosher salt and freshly ground pepper to taste (optional)
- zest from 1/2 lemon
- sesame seeds for garnish (optional)
Steps
- Bring a large pot of salted water to a boil and cook the soba noodles for 4 minutes.
- Add the broccoli to the pot during the final 3 minutes, then drain the noodles and broccoli.
- Melt the butter with the olive oil in a large skillet over medium-high heat.
- Add the sliced shiitake mushrooms and cook for 6 minutes until browned and tender.
- Add the noodles, broccoli, ponzu, and lemon zest, then toss for 2 minutes.
- Season with salt and pepper, and sprinkle with sesame seeds if using.
