Ingredients

  • 1 lb bone-in pork loin chops
  • 2 bone-in chicken breast halves
  • 1 lb beef top round steak
  • 6 cups water
  • 2 cans diced tomatoes
  • 2 cups chopped onion
  • 1 can (8 oz) tomato sauce
  • 1/2 cup cider vinegar
  • 1/4 cup sugar
  • 4 1/2 cloves garlic
  • 2 tsp hot pepper sauce
  • 2 cans whole kernel corn
  • 2 cans cream-style corn
  • 1 cup dry bread crumbs
  • salt and pepper to taste (optional)
  • minced fresh parsley (optional)

Steps

  1. Chop the onion and garlic, then place them with the pork, chicken, beef, water, tomatoes, tomato sauce, vinegar, sugar, and hot pepper sauce in an 8-quart pot; allow 15 minutes for preparation.
  2. Bring the pot to a boil, reduce the heat, cover, and simmer for 75 minutes.
  3. Remove the meats, let them cool for 15 minutes, and check that chicken reaches 165°F while pork and beef reach 145°F.
  4. Shred the meats, discard the bones, and return the meat to the pot with both cans of corn.
  5. Simmer the stew uncovered for 40 minutes, stirring occasionally.
  6. Stir in the bread crumbs and cook for 5 minutes until thickened.
