Ingredients
- 1/2 tsp salted butter
- 1/2 large red onion
- 3 cloves garlic
- 1/2 lb brussels sprouts
- 1 cup sweet corn
- 1 cup lima beans
- 1 tsp thyme
- 1/2 tsp parsley
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- 1 small lemon
Steps
- Melt the butter in a large skillet over medium heat.
- Cook the onion and garlic for 3 minutes.
- Add the Brussels sprouts and cook for 5 minutes, stirring often.
- Stir in the corn, lima beans, thyme, parsley, salt, and pepper.
- Cook for 6 minutes until the vegetables are tender, then squeeze the lemon over the skillet.
