- 2 tbsp butter
- 1 clove garlic
- 1 small onion
- 1 2/3 cups vegetable broth
- 1 lb frozen lima beans
- salt to taste (optional)
- black pepper to taste (optional)
- red pepper flakes to taste (optional)
- freshly grated parmesan cheese for garnish (optional)
- freshly chopped parsley for garnish (optional)
Steps
- Melt the butter in a medium saucepan over medium heat, then cook the onion for 8 minutes.
- Add the garlic and cook for 2 minutes.
- Stir in the vegetable broth, lima beans, salt, pepper, and red pepper flakes.
- Bring the beans to a gentle boil, then simmer covered over medium-low heat for 30 minutes.
- Uncover and cook for 3 minutes, then top with optional Parmesan and parsley.
