Ingredients
- 3 tbsp unsalted butter
- 1 large onion
- 1 cabbage
- 1 carrots
- 1 celery
- 1 bay leaf
- 8 cups vegetable stock
- 2 large potatoes
- 2 large tomatoes
- garnish sour cream (optional)
- garnish dill (optional)
Steps
- Melt the butter in a large pot over medium heat and cook the onion, carrot, and celery for 6 minutes.
- Add the cabbage and cook for 5 minutes until it begins to soften.
- Stir in the stock, potatoes, tomatoes, and bay leaf, then bring the soup to a boil.
- Reduce the heat and simmer uncovered for 25 minutes until the potatoes and cabbage are tender.
- Remove the bay leaf, season with salt and pepper, and serve with sour cream or dill if desired.
