Ingredients
- 1 head cauliflower
- 2 tbsp butter
- 1/2 cup diced white onion
- 2 cloves garlic
- 2 tbsp all-purpose flour
- 1 cup heavy cream
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 1/2 cups shredded cheddar cheese
Steps
- Heat the oven to 375 F.
- Steam the cauliflower florets in a covered 4-quart pot over boiling water for 5 minutes.
- Melt the butter in a 2-quart saucepan over medium heat, then cook the onion and garlic for 3 minutes.
- Whisk in the flour, cream, salt, and pepper, then cook for 3 minutes until thickened.
- Stir in 1 cup of cheddar until melted.
- Spread the cauliflower in a greased 9-by-13-inch baking dish, pour the sauce over it, and top with the remaining cheddar.
- Bake for 20 minutes until bubbling and lightly browned.
