Ingredients
- 3 cups frozen cauliflower rice
- 1 lb cherry tomatoes
- 1 lb smoked sausage
- 3/4 cup pesto
- 1/2 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 3 cups arugula
- 1/4 cup roughly chopped fresh basil
- freshly grated parmesan cheese (optional)
Steps
- Heat the oven to 425°F and spread the cauliflower rice, tomatoes, and sliced sausage on an 18-by-13-inch sheet pan.
- Toss the ingredients with salt, pepper, and a little oil.
- Roast for 25 minutes, stirring halfway, until the sausage is hot throughout and the tomatoes soften.
- Stir in the pesto, arugula, and basil on the hot pan.
- Return the pan to the oven for 5 minutes, then add parmesan if using.
