Ingredients
- 1 cup uncooked quinoa
- 2 cups broth
- 1 tsp garlic powder
- 1/2 tsp ground mustard
- 1/2 tsp onion powder
- 1 cup shredded zucchini
- 1 cup grated yellow cheddar cheese
- 1/2 cup plain greek yogurt
- salt & pepper to taste (optional)
Steps
- Rinse the quinoa under cold water.
- Simmer the quinoa, broth, garlic powder, mustard, and onion powder in a covered medium saucepan for 15 minutes.
- Stir in the zucchini and cook for 3 minutes.
- Remove the pan from the heat and stir in the cheddar and Greek yogurt.
- Season with salt and pepper, then rest for 5 minutes before serving.
