Ingredients
- 200 g soft unsalted butter plus extra for the tin
- 200 g golden caster sugar
- 4 eggs
- 2 tsp vanilla extract
- 1 tsp almond extract (optional)
- 75 g glacé cherries patted dry if in syrup
- 175 g self-raising flour
- 50 g ground almonds
- 1/2 tsp baking powder
- 100 g icing sugar
- 1 drop of almond extract
- 1 1/2 tbsp milk
- 2 tbsp toasted flaked almonds
Steps
- Heat the oven to 350 F and butter a 9-by-5-inch loaf tin.
- Beat the butter and sugar until pale, then add the eggs one at a time with the vanilla.
- Fold in the flour, ground almonds, baking powder, and cherries until just combined.
- Spoon the batter into the tin and bake for 45 to 50 minutes, until a tester comes out clean.
- Cool the cake in the tin for 10 minutes, then transfer it to a rack to cool completely.
- Stir the icing sugar, almond extract, and milk into a glaze, spread it over the loaf, and top with toasted almonds.
