- 1 boneless skinless chicken breasts
- 3 tsp mayonnaise
- 3 tsp dijon mustard
- 1/4 tsp panko bread crumbs
- salt and black pepper
- oil spray
Steps
- Pound the chicken breast to an even thickness and season both sides with salt and pepper.
- Stir the mayonnaise and Dijon mustard together, then spread the mixture over both sides of the chicken.
- Press the panko breadcrumbs onto the coated chicken.
- Heat a large skillet over medium-high heat and coat it with oil spray.
- Cook the chicken for five minutes per side, turning once, until golden and 165 F inside.
