Ingredients
- 2 lb Chicken thighs, bone-in or boneless (bone-in)
- 28 oz Canned tomatoes (crushed)
- 0.5 lb Bell peppers
- 8 oz Mushrooms
- 0.5 lb Onions
- 1 Garlic
- 12 oz Pasta
Steps
- Brown the seasoned thighs in oil in a Dutch oven and set aside.
- Cook sliced onion, peppers, mushrooms and garlic 6 minutes.
- Add tomatoes and oregano and return the chicken to the pot.
- Cover and simmer 35 minutes until the chicken is tender.
- Boil the pasta and serve with the chicken and sauce.
