Ingredients
- 4 chicken quarters
- salt & pepper to taste (optional)
- 2 tbsp olive oil
- 1/4 white onion
- 2 cloves garlic
- 1/3 tsp marjoram
- 1/3 tsp thyme
- 1 bay leaf
- 1 tbsp fresh parsley
- 1/2 tsp paprika (optional)
Steps
- Season the chicken quarters with salt and pepper, then heat the olive oil in a large covered skillet.
- Brown the chicken on all sides for 8 to 10 minutes, then transfer it to a plate.
- Cook the onion and garlic in the skillet for 2 minutes.
- Stir in the marjoram, thyme, bay leaf, parsley, paprika, and white wine.
- Return the chicken to the skillet, cover it, and simmer for 30 to 35 minutes.
- Check that the thickest chicken pieces reach 165 F before removing the bay leaf.
