- 1/2 cup coconut oil
- 1/2 cup packed brown sugar
- 1 egg yolk
- 1 tsp vanilla extract
- 1 1/2 cups chickpea flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2/3 cup chocolate chips
- coarse sea salt (optional)
Steps
- Heat the oven to 350 F and grease a baking sheet with cooking oil.
- Whisk the melted coconut oil, brown sugar, egg, egg yolk, and vanilla in a large bowl.
- Stir in the chickpea flour, baking soda, and salt until a soft dough forms.
- Fold in the chocolate chips and scoop 12 portions onto the baking sheet.
- Flatten each portion slightly and sprinkle with coarse sea salt if using.
- Bake for 10 to 12 minutes, until the edges are lightly browned and the centers are set.
