Ingredients
- 3 lb sweet potatoes
- 6 tbsp unsalted butter
- 1 cup half & half
- 1 tbsp minced canned chipotle peppers in adobo sauce
- 1 tbsp adobo sauce from the can of chipotle peppers
- 1 1/2 tsp salt
- 4 oz grated cheddar cheese
Steps
- Heat the oven to 425 F and place the whole sweet potatoes on a baking sheet.
- Bake the sweet potatoes for 50 to 60 minutes, until completely tender when pierced.
- Warm the butter and half-and-half in a saucepan over low heat for 3 minutes.
- Split the hot sweet potatoes, scoop out the flesh, and mash it with the warm butter mixture.
- Stir in the chipotle peppers, adobo sauce, and salt.
- Fold in the cheddar cheese and heat for 2 to 3 minutes, until melted.
