Ingredients
- 3/4 cup almond flour
- 1/2 cup spelt flour
- 1/4 cup coconut flour
- 1/4 cup ground flax seed
- 1 tbsp cinnamon
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup raisins
- 3 eggs
- 1/4 cup melted butter
- 2 tbsp maple syrup
- 5 1/2 tsp vanilla extract
Steps
- Heat the oven to 350 F and grease an 8-by-4-inch loaf pan with cooking oil.
- Whisk the almond flour, spelt flour, coconut flour, flax seed, cinnamon, baking soda, and salt.
- Whisk the eggs, melted butter, maple syrup, and vanilla in a separate bowl.
- Stir the wet mixture into the dry mixture, then fold in the raisins.
- Spread the batter in the pan and bake for 25 minutes, until firm in the center.
- Cool the loaf for 10 minutes before slicing.
