Ingredients
- 2 tsp butter
- 1/2 cup shallots
- 1 clove garlic
- 2 tbsp flour
- 1 1/2 cups fat free milk
- 2 tbsp parmesan cheese
- 1/4 tsp nutmeg
- 1/4 tsp fresh black pepper
- 1/4 tsp kosher salt to taste (optional)
- 4 oz boursin
- 16 oz bag frozen chopped spinach
Steps
- Melt the butter in a large skillet over medium heat, then cook the shallots for 3 minutes.
- Add the garlic and flour, and stir for 1 minute.
- Whisk in the milk and cook for 4 minutes until the sauce thickens.
- Stir in the spinach, Boursin, Parmesan, nutmeg, salt, and pepper, and simmer for 8 minutes.
- Cook until the spinach is hot and the cheese melts, then serve.
