Ingredients
- 1 lb rigatoni pasta or other tube shaped pasta
- 1 cup heavy cream
- 1/2 cup chicken or vegetable stock
- 12 oz jar roasted red peppers
- 8 fresh basil leaves plus 1/4 cup minced for serving (optional)
- 1/2 tsp sea salt
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup freshly grated parmesan cheese (optional)
Steps
- Bring salted water to a boil in a large pot.
- Cook the rigatoni for 9 to 11 minutes, then drain it.
- Puree the roasted peppers, cream, and stock until smooth.
- Simmer the pepper sauce in the pot for 3 minutes with salt and red pepper flakes.
- Return the pasta to the pot, stir in Parmesan and basil, and heat for 1 minute.
