Ingredients
- 2 tbsp extra virgin olive oil
- 1 small yellow onion
- 2 cloves garlic
- 1 1/4 cups arborio rice
- juice from 1/2 lemon
- 4 cups vegetable broth
- 1 cup frozen peas (optional)
- 1/4 cup nutritional yeast
- salt and pepper to taste (optional)
Steps
- Heat olive oil in a large skillet over medium heat and cook the onion, garlic, and mushrooms for 10 minutes.
- Stir in the arborio rice and cook for 2 minutes.
- Add the white wine if using and cook for 3 minutes.
- Pour in the vegetable broth one cup at a time, stirring often and waiting until each addition is absorbed, for 25 minutes.
- Stir in the peas if using and cook for 5 minutes.
- Mix in the lemon juice and nutritional yeast, then season with salt and pepper.
