Ingredients
- 2 cans cannellini beans
- 3 tbsp vegetable oil
- 2 cups tomatoes
- 5 challots
- 2 cloves garlic
- 1 pinch parsley
- 1/2 kg chopped chorizo
Steps
- Heat the oil in a 5-quart pot over medium heat and cook the chopped chorizo for 8 minutes, until it reaches 160 F.
- Add the shallots and garlic, then cook for 4 minutes until softened.
- Stir in the tomatoes and simmer for 10 minutes.
- Add the cannellini beans and parsley, then simmer uncovered for 15 minutes.
- Season with salt and pepper, and rest the stew for 5 minutes before serving.
