Ingredients
- 1/2 lb potatoes
- 2 sized eggs
- 2 tbsp mayonnaise
- 1 tsp dijon mustard
- 1/2 tbsp extra virgin olive oil
- 1 pinch smoked paprika
- 1 tbsp dill (optional)
- 1 pinch sea salt and black pepper
Steps
- Boil the potatoes in water for 20 minutes until tender, then drain and cool them for 15 minutes.
- Boil the eggs in water for 10 minutes until firm, then cool them in cold water for 10 minutes.
- Peel and chop the potatoes and eggs, and place them in a bowl.
- Stir in the mayonnaise, mustard, olive oil, paprika, dill, salt, and pepper.
- Chill the potato salad for 15 minutes before serving.
