Ingredients
- 3 very ripe medium bananas
- 3 eggs
- 3 tbsp pure maple syrup
- 1 tsp vanilla
- 3 cups organic spinach
- 2 cups packed fine blanched almond flour
- 1/2 cup unsweetened cacao powder
- 1/2 cup rolled oats
- 3 tbsp hemp hearts
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 cup dark chocolate chips (optional)
- milk of choice (optional)
- fancy maldon sea salt
Steps
- Heat the oven to 350 F and lightly oil a 12-cup muffin pan.
- Blend the bananas, eggs, maple syrup, vanilla, and spinach until smooth.
- Add the almond flour, cacao powder, oats, hemp hearts, baking soda, and salt, then blend until combined.
- Fold in the chocolate chips if using, then divide the batter among the muffin cups.
- Bake for 22 to 25 minutes, until the tops are set and a toothpick comes out mostly clean.
