- 2 tbsp olive oil
- 4 chicken breast
- salt
- black pepper
- 1 tsp italian seasoning
- 2 tbsp butter
- 3 tbsp flour
- 1 cup beef broth
- 1 cup chicken broth
- 2 tbsp sherry
- 1 tbsp worcestershire sauce
- 1/4 tsp dried thyme leaves
- 1 cup gruyere cheese
Steps
- Heat olive oil in a large oven-safe skillet over medium-high heat, season the chicken with salt, pepper, and Italian seasoning, and brown it for 4 minutes per side.
- Transfer the chicken to a plate and melt the butter in the skillet.
- Whisk in flour, beef broth, chicken broth, sherry, Worcestershire sauce, and thyme, then simmer the sauce for 6 minutes.
- Return the chicken to the skillet and cook it in the sauce for 10 minutes, until it reaches 165 F.
- Top the chicken with Gruyere and broil for 2 to 3 minutes, until the cheese melts and browns lightly.
