- 8 oz whole wheat pasta
- 1/3 cup extra-virgin olive oil
- 3 cloves garlic
- 1 lb cocktail size tomatoes
- kosher salt and freshly ground black pepper
- 2 cups fresh spinach leaves
- 1/3 cup fresh basil
- 1/2 cup parmesan cheese
- 1 cup fresh ricotta cheese
Steps
- Boil the pasta in salted water according to the package directions, then drain it.
- Heat the olive oil in a large skillet over medium heat.
- Cook the sliced garlic and tomatoes for 4 minutes, until the tomatoes soften.
- Stir in the spinach and cook for 2 minutes, until wilted.
- Add the pasta, basil, parmesan, ricotta, salt, and pepper, then toss until combined.
