6 large egg whites
1 1/2 cups granulated sugar
2 tsp corn starch
1/2 tbsp lemon juice
1/2 tbsp vanilla extract
1 1/2 cups heavy whipping cream
2 tbsp granulated sugar
4 1/2 cups fresh fruit
15 mint leaves (optional)

Steps

Heat the oven to 250°F and line a baking sheet with parchment.
Beat the egg whites until foamy, then gradually beat in 1 1/2 cups sugar until stiff and glossy.
Fold in the cornstarch, lemon juice, and vanilla.
Shape the meringue into one 9-inch round on the baking sheet.
Bake for 75 minutes, turn off the oven, and cool the meringue inside for 20 minutes.
Beat the cream with 2 tablespoons sugar until thick, spread it over the cooled meringue, and top with fruit and mint.
