150 g plain flour plus 1 tbsp
50 g cocoa
8 eggs separated
200 g caster sugar
5 eggs whites
200 g caster sugar
250 g walnuts chopped
1 tbsp plain flour
1 tbsp potato starch
100 g double cream
100 g chocolate chopped

Steps

Heat the oven to 350 F and line a 9-by-13-inch baking pan with parchment.
Beat the eight egg yolks with 200 grams of sugar until thick and pale.
Whisk the flour, cocoa, potato starch, and one tablespoon of flour in a separate bowl.
Beat all thirteen egg whites with the remaining sugar until firm peaks form, then fold them into the yolk mixture with the dry ingredients.
Fold in the walnuts, spread the batter in the pan, and bake for 35 to 40 minutes, until firm.
Cool the cake completely, then warm the cream, stir in the chopped chocolate, and spread the topping over the cake.
