6 small to medium zucchini
1/4 cup extra virgin olive oil
3 tbsp lemon juice
1 lemon
3 cloves garlic
1 tsp each dried parsley
1 tsp kosher salt
1/2 tsp pepper

Steps

Whisk olive oil, lemon juice, garlic, parsley, salt, and pepper in a small bowl.
Halve the zucchini lengthwise and brush all sides with the lemon mixture.
Heat a grill to medium-high, about 400 F.
Grill the zucchini cut-side down for 5 to 7 minutes.
Turn the zucchini and grill for 5 to 7 minutes more until tender and marked.
Brush with the remaining lemon mixture and rest for 5 minutes before serving.
