Ingredients
- 3 1/2 overripe medium bananas
- 2 cups all-purpose flour
- 1/3 tsp fine salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp ground nutmeg
- 1/4 cup unsalted butter
- 1/4 cup coconut oil
- 1/3 cup brown sugar
- 2 tbsp 1/4 cup white sugar (optional)
- 2 large eggs
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
Steps
- Mash the bananas in a large bowl, then stir in the melted butter, coconut oil, brown sugar, optional white sugar, eggs, and vanilla.
- Whisk the flour, salt, baking soda, baking powder, nutmeg, and cinnamon in a separate bowl.
- Stir the dry mixture into the banana mixture just until no dry spots remain.
- Grease a 7-inch round cake pan, fill it with the batter, and cover it tightly with foil.
- Pour 1 1/2 cups water into the Instant Pot, add the trivet, and place the covered pan on it.
- Cook at high pressure for 55 minutes, let the pressure release naturally for 10 minutes, then release the remaining pressure.
- Remove the pan, cool the bread for 15 minutes, and check that the center reaches 190 F.
