Ingredients
- 2 lb beef finger meat
- 1 large potato
- 2/3 cup unsalted chicken stock or high quality beef stock
- 1/4 cup coconut milk
- 2 tbsp chu hou sauce
- 3 1/2 tbsp curry powder
- 3 bay leaves
- 6 cloves garlic
- 1/2 shallot
- 1 tbsp fish sauce
- 1 1/2 tsp white sugar
- 2 1/2 tbsp cornstarch
- 3 tbsp cold water
Steps
- Set the Instant Pot to sauté, heat a little oil, and brown the beef for 5 minutes.
- Add the potato, stock, chu hou sauce, curry powder, bay leaves, garlic, shallot, fish sauce, and sugar.
- Seal the pot and cook at high pressure for 25 minutes.
- Let the pressure release naturally for 15 minutes, then release any remaining pressure.
- Cook ground meat until it reaches 160 F inside.
- Stir in the coconut milk and cornstarch slurry, and simmer on sauté for 5 minutes until thick.
