Ingredients
- 3 lb chicken thighs or chicken breasts
- 2 cups unsalted chicken stock
- 6 cloves garlic
- 2 tsp fine salt
- optional: 3 bay leaves
- optional: 1 tablespoon regular soy sauce
- salt and black pepper
- green onions
- cilantro
Steps
- Place the chicken, stock, garlic, salt, bay leaves, and soy sauce in a 6-quart Instant Pot.
- Seal the lid and cook at high pressure for 12 minutes.
- Let the pressure release naturally for 10 minutes, then vent the remaining pressure.
- Check that the chicken reaches 165 F before transferring it to a bowl.
- Shred the chicken with two forks and moisten it with a little cooking stock.
- Stir in the green onions and cilantro, then season with salt and pepper.
