Ingredients
- 1 1/2 cup strong coffee or espresso
- 4 egg yolks
- 3 egg whites
- 3/4 cup sugar
- 1 1/2 cup mascarpone cheese
- 6 1/2 oz savoiardi biscuits
- cocoa powder (optional)
Steps
- Brew the coffee or espresso and cool it in a shallow bowl.
- Whisk the egg yolks with half the sugar in a heatproof bowl over gently simmering water until thick and 160 F, about 5 minutes.
- Whisk the egg whites with the remaining sugar in a clean heatproof bowl over the simmering water until glossy, firm, and 160 F, about 5 minutes.
- Fold the mascarpone into the warm yolk mixture, then gently fold in the cooked egg whites.
- Dip the biscuits briefly in the coffee and layer them with the mascarpone mixture in an 8-inch square dish.
- Dust the top with cocoa powder if using, then chill for 5 minutes before serving.
