- 1 bunch curly kale
- 1/4 cup extra-virgin olive oil
- 1 tbsp lemon juice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/2 cup greek yogurt
- 1/2 cup grated parmesan cheese
- 1 clove garlic
- 1 tsp dijon mustard
- 2 anchovy fillets (optional)
- 1 cup croutons
Steps
- Strip the kale leaves from their stems, tear them into a large bowl, and massage them with lemon juice, salt, and pepper for 2 minutes.
- Whisk the yogurt, Parmesan, garlic, mustard, anchovies, and olive oil in a small bowl.
- Pour the dressing over the kale and toss until every leaf is coated.
- Fold in the croutons and serve immediately.
