Ingredients
- 1 large egg
- 2 tsp kosher salt
- 1 tsp black pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp dried thyme
- 2 tbsp minced garlic
- 2 lb lean ground beef
- 1/2 cup blanched finely ground almond flour
- 3/4 cup grated parmesan cheese
- 1/4 cup unsweetened or sugar-free ketchup
- 2 tbsp finely chopped parsley (optional)
Steps
- Heat the oven to 350 F.
- Mix the egg, salt, pepper, garlic powder, onion powder, thyme, minced garlic, beef, almond flour, Parmesan, and parsley.
- Shape the mixture in a 9-by-5-inch loaf pan and spread the ketchup over the top.
- Bake for 65 minutes, until the center reaches 160 F.
- Rest the meatloaf for 10 minutes before slicing.
