Ingredients
- 6 tbsp canola oil
- 8 oz tofu
- 1 cup sliced shiitake or brown mushrooms
- 8 green onions
- 4 cups cold cooked white rice
- 1 cup kimchi
- 3 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 1 tbsp butter
- 4 eggs
Steps
- Pat the tofu dry and cut it into cubes.
- Heat 2 tablespoons canola oil in a large skillet over medium-high heat.
- Cook the tofu for 5 to 6 minutes, turning until browned.
- Add the mushrooms and half the green onions, and cook for 4 minutes.
- Add the remaining 4 tablespoons oil, rice, kimchi, and soy sauce, and stir-fry for 8 to 10 minutes.
- Stir in the sesame oil and butter.
- Heat a 10-inch skillet with the remaining oil, fry the eggs for 4 to 5 minutes, and cook until the yolks are firm.
