Ingredients
- 500 g leek
- 3 diced red pepper
- 200 g rice
- 1 clove finely chopped garlic
- 1 l vegetable stock
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp parsley
- 1 tsp basil
- 1 pinch salt
- 1 pinch pepper
- 1 splash olive oil
Steps
- Heat the oven to 375 F and oil a 9-by-13-inch baking dish.
- Add the leeks, red peppers, rice, garlic, paprika, oregano, parsley, basil, salt, and pepper to the dish.
- Pour in the vegetable stock and stir until combined.
- Cover the dish and bake for 35 minutes.
- Uncover and bake for 5 minutes, until the rice is tender and the liquid is absorbed.
