- 1 piece canadian bacon
- 1/4 cup egg substitute
- 1 tbsp salsa
- 1 tbsp shredded reduced-fat cheddar cheese
- 1 whole wheat english muffin
- 3 spinach leaves
Steps
- Toast the English muffin halves until lightly browned.
- Place the Canadian bacon on a microwave-safe plate and heat it for 30 seconds.
- Whisk the egg substitute with the salsa, then microwave it in a greased microwave-safe bowl for 45 seconds.
- Stir the egg, add the spinach and cheese, and microwave for 30 to 45 seconds more, until the egg is firm.
- Place the Canadian bacon and egg mixture between the muffin halves.
