- 1/2 yellow onion
- 1 tbsp olive oil
- 1 1/2 lb lean ground beef
- 1/2 green bell pepper
- 3/4 cup seasoned bread crumbs
- 1/4 cup barbecue sauce
- 1 tbsp worcestershire sauce
- 1 large egg
- 2 tbsp chopped fresh parsley
- 1/2 tsp salt (optional)
- 1/4 tsp black pepper
- 1/3 cup ketchup
- 1/3 cup chili sauce
- 1 tbsp brown sugar
Steps
- Heat the oven to 375 F and lightly oil a 12-cup muffin pan.
- Cook the onion and green pepper in olive oil in a skillet over medium heat for 5 minutes.
- Mix the cooked vegetables, beef, bread crumbs, barbecue sauce, Worcestershire sauce, egg, parsley, salt, and pepper.
- Divide the mixture among 10 muffin cups and bake for 20 minutes, until the centers reach 160 F.
- Stir together the ketchup, chili sauce, and brown sugar.
- Spread the sauce over the meatloaves and bake for 5 more minutes.
