Ingredients
- 12 oz spaghetti
- 5 large egg yolks
- 1 cup freshly grated parmesan or pecorino romano (optional)
- 1/2 tsp freshly cracked black pepper (optional)
- 2 tbsp extra-virgin olive oil
- 4 oz diced guanciale
- flaky salt (optional)
Steps
- Boil the spaghetti in salted water according to the package timing until tender, then reserve 1 cup cooking water and drain.
- Whisk the egg yolks, cheese, and pepper in a bowl until smooth.
- Cook the guanciale with the olive oil in a large skillet over medium heat for 6 to 8 minutes, until crisp.
- Add the hot spaghetti to the skillet and toss for 1 minute.
- Remove the skillet from the heat, add the egg mixture, and toss while adding cooking water until coated.
- Return the skillet to low heat and stir for 2 to 3 minutes, until the eggs are firm and the sauce clings to the pasta.
