2 cups flour
1 1/2 tsp baking powder
1 cinnamon stick finely chopped or 2 tsp. ground cinnamon
1/4 tsp salt
3/4 cup piloncillo shaved and in small chunks
2 tsp brown sugar
1/2 cup lard or shortening
1 large egg
6 tbsp milk
pam non-stick cooking spray

Steps

Heat the oven to 350 F and spray a baking sheet with cooking spray.
Whisk the flour, baking powder, cinnamon, and salt in a bowl.
Beat the lard, brown sugar, and piloncillo until blended, then beat in the egg and milk.
Stir in the flour mixture and pecans until a soft dough forms.
Drop eight portions onto the baking sheet and flatten them slightly.
Bake for 12 minutes, until the edges are set, then cool the cookies on the sheet.
