Ingredients
- 4 egg whites
- 3/4 cup sugar
- 5 tsp cornstarch
- 1 tsp white vinegar
- 1/2 cup cranberries
- 1/2 cup orange juice
- 1/2 cup pomegranate arils
- 1 tbsp honey
- mint (optional)
Steps
- Heat the oven to 250 F and line a baking sheet with parchment.
- Beat the egg whites in a large bowl until foamy, then gradually beat in the sugar until stiff and glossy.
- Fold in four teaspoons cornstarch and the vinegar, then spread the meringue into one eight-inch round on the baking sheet.
- Bake for 75 minutes, turn off the oven, and let the pavlova cool inside for 30 minutes.
- Simmer the cranberries, orange juice, honey, and remaining cornstarch in a small saucepan for five minutes, then cool completely.
- Top the cooled pavlova with the cranberry mixture and pomegranate arils, adding mint if using.
