- 3 cups granulated sugar
- 29 oz pure pumpkin puree
- 1 cup melted butter
- 1 tsp vanilla extract
- 2 eggs
- 5 cups all-purpose flour
- 6 tsp baking powder
- 4 tbsp pumpkin pie spice
- 1 1/2 tsp baking soda
- 1 tsp kosher salt
- 12 oz semi-sweet chocolate chips
Steps
- Heat the oven to 375 F and oil two baking sheets.
- Whisk the sugar, pumpkin, melted butter, vanilla, and eggs in a large bowl.
- Stir in the flour, baking powder, pumpkin pie spice, baking soda, and salt.
- Fold in the chocolate chips, then drop rounded spoonfuls onto the baking sheets.
- Bake for 11 to 13 minutes, until the edges and centers are set.
- Cool the cookies on the sheets for 5 minutes.
