- 1 1/3 cup all-purpose flour
- 3 tbsp ground flax
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp cinnamon
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup milk
- 1/4 cup pure maple syrup
- 3 tbsp butter
- 1 tsp pure vanilla
- 1/2 cup pureed pumpkin
Steps
- Heat the oven to 375 F and line a 12-cup muffin pan.
- Whisk the flour, flax, baking soda, baking powder, cinnamon, and salt in a bowl.
- Melt the butter, then whisk it with the eggs, milk, maple syrup, vanilla, and pumpkin.
- Stir the wet mixture into the dry mixture until just combined.
- Divide the batter among the muffin cups and bake for 15 to 18 minutes until firm.
- Cool the muffins in the pan for 5 minutes before removing them.
