Ingredients
- 1 cup whole grain brown rice
- 1 chicken or vegetable bullion
- 2 1/2 cups water
- 2 tsp butter
- 10 oz frozen spinach
- 2 cloves garlic
- 2 tsp olive oil
- salt
- fresh grated cheese (optional)
Steps
- Heat the olive oil in a 2-quart saucepan over medium heat for 2 minutes.
- Cook the garlic in the oil for 1 minute.
- Add the rice, water, bouillon, butter, salt, and pepper, then cover and simmer for 32 minutes.
- Stir in the frozen spinach, cover the saucepan, and cook for 10 minutes.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Fluff the rice and season it with salt and pepper before serving.
