4 tbsp olive oil
1 large chopped onion
300 g jersey royal potatoes
2 cloves chopped garlic
8 egg
2 1/2 tbsp parsley
300 g salt cod

Steps

Soak the salt cod in cold water for 15 minutes, drain it, and simmer it in fresh water for 8 minutes.
Drain and flake the cod, removing any bones, then check that it reaches 145 F and flakes easily.
Cook the potatoes and onion in the olive oil in a 10-inch ovenproof skillet over medium heat for 12 minutes.
Add the garlic and cod, then cook for 2 minutes while stirring gently.
Heat the oven to 375 F, beat the eggs with the parsley, and pour them into the skillet.
Bake for 10 to 12 minutes until the eggs are firm, then rest the tortilla for 5 minutes before cutting.
