Ingredients

2 lb flank steak
2 tbsp olive oil
1 lime
4 cloves garlic
2 tsp paprika
2 tsp cumin
2 tsp kosher salt
1/2 tsp ground black pepper
1 lb cherry tomatoes
3 shallots
warm tortillas (optional)

Steps

Heat the oven to 425 F and lightly oil a large rimmed sheet pan.
Rub the steak with olive oil, lime juice, minced garlic, paprika, cumin, salt, and pepper.
Toss the tomatoes and sliced shallots with the remaining oil and spread them on the pan.
Roast the vegetables for 15 minutes, then place the steak among them.
Roast for 12 to 18 minutes, turning once, until the steak reaches 145 F and the vegetables soften.
Rest the steak for 5 minutes, then slice it thinly across the grain.
