Ingredients
- 1 lb raw shrimp
- 3/4 cup panko breadcrumbs
- 1/4 cup red bell pepper
- 3 tbsp chives (optional)
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 eggs
- 1 tsp lemon zest
- 4 tbsp olive oil
Steps
- Chop the shrimp finely and mix them with the panko, bell pepper, chives, salt, pepper, eggs, and lemon zest.
- Shape the mixture into six even cakes and chill them for 5 minutes.
- Heat the olive oil in a 12-inch skillet over medium heat.
- Cook the shrimp cakes for 4 minutes on each side until golden and opaque throughout.
- Check that the shrimp reaches 145 F, then drain the cakes briefly on a plate.
