Ingredients
- 2 oz uncooked soba noodles
- 1/2 tbsp toasted sesame oil
- 1/2 tsp minced garlic
- 1/2 tsp ground ginger
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup broccoli florets
- 1 large pasture-raised egg
- 1 tbsp coconut aminos
- 1 tbsp sriracha sauce
- 1 tbsp creamy nut butter
Steps
- Boil the soba noodles in a small pot of water for 4 to 5 minutes, then drain them.
- Heat the sesame oil in a small skillet over medium heat.
- Cook the garlic, ginger, onion, bell pepper, and broccoli for 3 minutes.
- Add the egg and scramble it for 2 minutes, until firm.
- Stir in the noodles, coconut aminos, sriracha, and nut butter, then cook for 1 minute.
